Ahem. I decided that my kiddos will have homemade cookies every day in their school lunches. For. The. Rest. Of. Their. Lives. What have I gotten myself into here? That's 18ish more years of homemade cookies. So, Sunday night we do the whole cookie making ritual together. Chocolate chip is the family favorite but this week I decided to shake it up a bit and make a batch of delish chocolate chocolate chip. In my effort to be more healthy (an oxymoron when talking about cookies, for sure) I decided to substitute half of the oil with applesauce. I do this pretty frequently when making baked goods - it works amazing for brownies and cakes and the like. Not so much with cookies. Never again. They are horrible - too cakey, thin and spread out. They taste fine but no one likes the texture. I may have to chuck the entire batch and make a mid week batch instead. Don't try this at home...

Thanks for the tip! I'm on the homemade band wagon too, more out of neccessity, but we're not making them nearly as often as you! Wow.
Okay I love it. I do homemade bento lunches 4 out of 5 days a week and adding some homemade cookies would be great.
Here is our favorite cookie recipe:
1 Cup Sugar
1 Cup Brown Sugar
1 Cup Butter
2 Eggs
2.5 cups Flour
1 Tsp Baking Soda
1 Tsp Baking Powder
1/4 Tsp Salt
1 Cup Oatmeal
1 Cup Shredded Sweetened Coconut
Mix the first four ingredients together. In a separate bowl, mix the next four ingredients and then add into the wet ingredients. Finally, add the oatmeal and coconut. Cook at 325 degrees for about 8-10 minutes until slightly brown on the bottom.
These are chewy cookies with a perfectly crisp outside. Yum! My favorite cookie ever.
You can add chocolate chips if you want.
Return to homemade? What about those of us who never left? From scratch is the best with everything, I think! Lately we're into couscous, Moroccan vegetable dishes, and vegetables straight from the garden. Not to mention Great Harvest Bread's Dakota!

I thought, as you all grew up, that chocolate chip cookies, fresh from the oven were a sign that I loved you. I made a lot of cookies!

Gosh, I hope my kids still feel the love with the Chips Ahoy! That is a lot of baking! I hope your next batch is a return to yummy as usual ;)

I have an amazing chocolate chip cookie recipe. Seriously YUMMY. I'm too lazy to type it here, but e-mail me if you want it.
You know you can freeze cookies, right? I make a triple batch of cookie dough, make little round balls and flatten them slightly, then flash freeze on a cookie sheet for an hour or two. Throw them in a ziploc bag and whenever you need cookies, pull them out and bake them as normal, just add a minute or two. They are so nice to have around. Then you could theoretically only bake a few cookies a day, keep a couple different varieties in your freezer, always have fresh cookies if you need them. Avoid this plan, though, if you are addicted to cookie dough because they are DELICIOUS straight out of the freezer and are very very addictive. Not that anyone I know has a problem with that... ;)
